Default Adding aftermarket Amp to x-type

Hi,
I've been looking through all the threads and can't find an answer to my question, hopefully someone will provide me with a quick answer.

I have an X-Type Estate (Station Wagon) 2005, with the standard factory head-unit. It's not the premium system but has got cd-changer etc.
I have a Phoenix Gold Amp and sub-box that I want to wire up.

The amp used in the Premium system uses an optical cable to connect to the amp.

I only want to power the sub from the amp as the rest of speakers are ok.

I know I could get a speaker to RCA (phono) converter easy enough, but that would mean splicing into the rear cables (as I want to continue using these). Is there an adapter/harness/copnverter anyone knows of that would let me use the optical connection instead?

I used an aftermarket amp, have a look at my premium-ish sound post. I added a hi-lo converter to the wiring loom of the radio to get the RCA output,
