On the boot floor or spare wheel well you will find either grommets or circular metal plugs which can be knocked out and replaced with grommets to give easy access for the wiring harness.
The Parts Catalogue shows two metal sealing plus (item 5) and one each rubber grommet (item 6) and plastic plug (item 7) in the spare wheel well:

Alternatively, you could remove the plastic shield surrounding the boot lock and drill a circular hole through the panel behind it, fitting a grommet to seal it. Once the plastic shield is refitted, the wiring is completely hidden. This is the method used for installing the OE Jaguar towing bar electrics.
