It may not plug into anything, standard looms have spare plugs

Not exactly sure but mine has one just like it.

I thought it might have been for a optional coolant level sensor that plugged into the bottom of the coolant overflow tank as there is what looks like a place where a plug would have fit into.

Mitch, that plugs into the battery box. If you look on the backside, there is a spot for the plug. But, if you look inside there, you will find no connections for the plug. That plug is only used for shipping the vehicle and putting the battery on a battery tender. Now that you have the car, it is a useless plug.
