is dealer the only place I can have these things done? Can I do anything like this myself with SDD? If so, what’s the cable I’d need to get SDD fully working? I’m struggling fo find and answer.

I haven't ran across anyone performing this update outside of the dealer. It should be a free update and will take a few hours to complete. Once it's done you will be able to receive updates over the air.

You can search threads on here and F-Type section about this update. The bottom line is unless you have the larger screen from 2018, you will not get CarPlay.
