The Queen does regularly drive herself around, she was a driver during WW2. She was a regular sight driving various XJ's and Land Rovers around. The SVO cars designed for the Palace had some special extras, including armour plating, special glass and their own oxygen system. The Queen personally takes care of her dogs, even feeding and putting them to bed herself daily. As a Corgi owner myself I can tell you the fur gets everywhere, my XJ has Corgi fur in places Corgi's don't go. Trust me.
The Monachy are normal people just like the rest of us, they like their independence. They all have their own cars and I know that Prince Charles has a black taxi he drives around London where he can hide in plain sight.
I always wondered how they got away with their plaque, I suspect it was added by some ignorant 2nd hand car dealer.

That said, pictures of the Queen in a Jaguar do extremely well here in Asia, they love them.
