How to put Freon in 2000 XJ8
I live in Las Vegas, Lately I've noticed my air is getting warmer, so I bought some Freon . The plug that connect to the compressor is too small . Is there a place where I can get a larger plug to fit the compressor. I only see one place to connect the Freon to the compressor. Is there another ?

Welcome to the Jaguar Forums! I have moved your thread from the forum for the X350 to the forum for the X308, which is the Jaguar factory project code for your 2000 XJ8.
What Mikey is so helpfully referring to is that Freon is a registered trademark of DuPont and was applied to a range of refrigerants that included R12, which was used in automotive A/C systems until the early '90s, when it was replaced by R134a, which is not know by the name Freon, but simply as "refrigerant." Fittings for systems that use R134a are different sizes than those for R12 systems.
Adding refrigerant to your system may be a workable short-term solution, but if your system is low on refrigerant you probably have at least a slow leak and it would be prudent to track it down and repair it. Also, you not only lose refrigerant via a leak but also the oil the compressor needs to survive, so the best option would be to add some leak detector to your system, find and repair the leak, then have the system professionally evacuated, vacuum tested, and recharged with the correct amounts of refrigerant and oil.

The product you want is called A/C PRO. It is a inexpensive kit that includes the coupler and gauge, hose and refrigerant, AND INSTRUCTIONS. Found at most auto parts stores (and Walmart).

Then Google, How to recharge A/C refrigerant in a Jaguar XJ8. You should find a YouTube that walks you through the steps using an X308 and the A/C PRO.
Super cheap, super easy. The gauge will tell you if you are holding pressure (if not, you need to have a pro find the leak).
Did mine two years ago: can freeze meat today.

Remove the plastic cover going across the middle of the car, forward of the firewall.
The low pressure port is located there. The one you found was the high pressure port.
Use R134a. Some comes with dye to locate leaks. 50 PSI on a 95 degree plus day.
