When I last did the front & rear wheel bearings and diff rebuild on our '93 I read the labels of all the greases carried by our local O'Reilly and opted for the Lucas X-TRA Heavy Duty Grease, which had the highest liquefaction rating (560F). I used it in the wheel bearings, U-joints, hub carrier bearings, etc.
I think Doug is right - any brand rated for wheel bearings should be fine in the U-joints - the important thing is to keep forcing new grease in until all the old grease has come out. The hardest U-joints to do are the ones in the rear hubs - you have to get them turned just right to access the nipple. Much easier with the hub removed. You don't need to do your rear wheel bearings, do you?

But ...I found it pretty straightforward after all!
Although there's only a small open "access window" when the wheels are in the correct position, it was pretty easy to locate the sweet spot with the trans in neutral ...so all done easy peasy.
