Doug Dwyer runs a V12, so will be able to tell you a lot more than me. The heat of the V12 means under-hood wiring gets a lot of heat, and for an old car, a full replacement of all engine wiring is probably a wise investment.

I use GXL or TXL. As I recall the spec is the same except for insulation thickness.
16 gauge is fine. For the injectors specifically I use 18 gauge but, of course, 16 gauge would be suitable there as well
For the injector harness the key thing (more important than wire spec, IMO) for maximum durability is to move the harness off the valley floor. Most guys re-route it along the injector rail.
The S57 guides show the wiring colors. I can send you a copy if you'd like.
Finding wires with the correct colors codes takes a little searching. Lots of single color wire is offered. Wiring with tracer colors, not so much.
This outfit has quite a few choices; I just placed an order with them a few days ago. We'll see how it goes
Colors for the injector harness are not so important, IMO, because you'll be wrapping it all up in some sort of sheathing anyway. The colors will never be noticed once your done. When you make up your new harness just keep notes on what you've done.

Attention to V12 wiring is essential to happy V12 ownership.
In saying "....full replacement of all engine wiring..." do you mean everything in the engine bay? If so, going that far that is not needed, in my experience. But there WILL be lots of actual engine wiring needing repair or replacement, yes. It's a given.

I meant the wiring surrounding and attached to the engine, for the operation of the engine itself.
