It is not that hard to take the leather covers off the seats and swap them over, even swap the foams as well if they are also a bit tired. Little edge clips secure the leather at the bottom/underneath of the frame. But, another but, then the holes in the leather for the levers are on the wrong side, so you need to make new ones and patch the old ones - which is a pain and difficult to do well at home.
FWIW there is a place in the UK called Black Country Jaguars that have bought several container loads of XJS seats etc direct from Jaguar. They might have a brand new factory original in your colour and style.

I knew Jaguar clear out remaining trim stock a number of years after a model ceases production but had no idea who was buying it. That's a very useful contact.
Black Country Jags website is very basic but indicates they already have all the remaining XJS and XJ40 seating so it's likely they'll do the same for later models as Jaguar clears them.

Thanks for posting the link. I often find that places like Pauls Jag, Terry's Jag etc tend to be much, much cheaper than "breakers" on flee bay who want to literally gouge your eyes out for used parts. ........Just today I asked a flee-bay seller to quote me on some used interior parts, and,-no lie-Pauls Jag quoted me about 100.00 dollars less for the same part brand new. You are either going to get totally ripped of or get a great deal.
