It's the same on all modern Jags with the electronic oil level read-out, 5.0 SC included.
Straight after shutdown the engine has heaps of oil (my best guess around 1.5 litres) in the various oil galleries and all that oil takes a while to drain back down into the sump where the oil level is measured.
That's why the Owner Manual/Handbook says to wait 10 minutes after shutdown before attempting to bring up an oil level read-out, and if you try to access the read-out before 10 minutes have elapsed you get the message "unavailable refer to handbook". Obviously you have figured out that you can get a "hot" oil level read-out by popping the hood/bonnet.
I for one don't bother faffing about waiting 10 minutes, instead I always check the oil level first thing in the morning with a dead cold engine and it's never failed me yet!

I did notice the oil level meter change a bit when measuring hot (indicating 1qt low, then .5qt low) , so exactly as you say, oil draining back into the pan.
