25 years old. Too young for an XK?
Do it.. I bought my X Type as a 30th bday present to myself and I look towards getting another Jag in the near future. The XK are real nice and from what I see on these boards pretty reliable if properly maintained.

Your approach sounds fine to me, you're almost to old to start with the Jags based on my experience! I got my first Jaguar in 1965 when I was 16, it was a 1964 3.8 E-Type coupe. Although I loved it and it was a great car, I got pretty wild with it and wrecked it within a year. I got smarter as I got older and have had many nice cars since. I currently have a 2006 XKR coupe, a 2003 Mini and a 2005 XJ8, so you can see I have always loved the Jags. Of all the cars I've had, the Jags have always been among the memorable.
I'd hang on to your 87 GT 5.0!
Thanks.. I have no plans to get rid of it anytime soon.. I wish it was warmer out so I could drop the top and go for a nice cruise down by the beach..

If you are going with a dealer, you want to get a car with Select Edition coverage. I did that with my 01 XK8 and it was definitely well worth it. Beyond anything, it gives you peace of mind that any potentially expensive repairs will be covered. I was going to go through a car broker, but found that aftermarket warranties seemed to be a crap shoot. Good luck!
