This might be a stupid question, but I want to be sure before I mess something up.

I replaced the track rod ends. Measured the track before I did that, and I’m confident that it will be the same with the new rod ends.
However in case I need to adjust track / toe – how is that done? Did not find any description in JTIS.

The tie rod ends are secured with a counter-nut, so I assume I can turn the tie rod like in any other vehicle, just need to undo the gaiter. Is that a correct assumption, or does Jaguar expect me to undo the tie rod end and turn it for adjustment?

You're correct just loosen the jamb nut and turn the rod. Tight the jamb when done. You can probably get if close by string or eye but take it to a machine to save your tires in the long run.
