Don't think that's an original Jaguar Radio - more likely an "aftermarket" upgrade !!
Probably cheaper and quicker to replace the whole radio than to try and track down a replacement front for a Sony/Kenwood/JVC/Hitachi/DingDongSingSong/Anonymous head unit.
If you want to keep (or go back to) original Jaguar fitted kit - it would almost certainly have been Alpine - plenty on Ebay and elsewhere.
Edit : have you checked in the trunk (boot), glove compartment, and the little sunglasses/cocaine holder just below the steering wheel - might be there.

I think so - I'm no authority on the subject but I think that the very early cars (and mine is one of them) had a Harmon Karden branded (but made by Alpine) installation in which the head-unit is sort-of "mission control" and everything is wired thought it. Sometime in 1999 (?? not sure) - this was replaced by an Alpine branded installation where the head-unit could be switched between "standard" and "premium" according to whether or not there was a separate amplifier in the trunk (boot) and it uses th Alpine Ai-Net protocol which uses "bespoke" plugs and sockets and isn't easy to bypass.
So ................. can't be sure but a 99 might be OK in an 03 PROVIDING that both have either the "poverty spec" or "superior-spec" system in term,s of donor and recipient.

I believe the 03 is different than the 99 offered by bobroy (but I'm sure it can be made to work).
The real question is what did they do to the wiring. There are no stock harnesses for the xk8, so they probably cut and spliced the new radio in. They may have also bypassed the amp (if premium sound) and run into head unit.
Even if you pulled the head unit and found the model, finding the plate would probably be difficult.
I'd be looking at a new head unit.
