Default Rear bumper
Does anyone know how to remove the rear bumper diffuser (gray plactic cover) on a 07 XK?

Yep... go one forum down from the one you clicked on. It's rather confusing, there are two XK forums, one for the older model XK8/XKR and one for the newer model XK/XKR.
