I can explain the suddenness of the dial movement. The temp gauge is not a linear analog in the sense it registers the movement of actual engine water temperatures. It is more like a limit-type gauge. As long as your engine water temp is within the specified limits it reads normal. If temps exceeds the range of the specs, say something around 200-220'?, then the needle immediately jumps to the hot side of the dial.

If the actual engine water temp proved to be within operating range, the sender unit or an ECU parameter could be at fault. Either way you need to first get an OBD II code reading to determine the next step in your troubleshooting. gordo

No; if your engine water temp was say 220 degrees, it would take 15-20 minutes for it to cool down enough to remove radiator cap. There is most likely another cause for this problem. As I suggested, you need to have the codes read to logically plan your next move. It maybe something simple like a water temp sensor that is a five minute fix costing less than $50. Get your codes read. gordo
