Default should I install eccentric bolts while replacing ...

Gearing up for a complete bushing overhaul / shock mount / ball joints ( basically all the easy bits that rub together ) for my 2000 XK8 - and I read about an eccentric bolt that was sometimes used for alignment ... and I have no clue if this car has them.

( The car tracks perfectly now, and has nice tire wear patterns. )

Since I'm all up underneath her anyway, should I just order some and do the replacement?

The eccentric bolts are in the carriers/wishbone assemblies not in the shock bushings from my knowledge and past experience. Just recently change the upper front bushings (05MY XK8) and there are no eccentric bolts in that assembly.

absolutely. With out replacing there is no adjustment on thelower control arms
