I was lucky as bought my oatmeal leather from a company that supplied jaguar her in the UK. Total cost was £200
Then paid a local trimmer to trim to my specs, which I think bought my 96/97 MY into this century back in 2011, pics below were taken last year so 6yrs after fitment
If I ever have to replace the seat covers for my 2006 XK8, I hope I'll be able to keep my later seat style (i.e. separate head restraints) but upgrade to genuine Connolly Bros. leather. In my dream, while I'm at it, it would be lovely to replace the light and dark taupe with all saddle tan.
40+ years ago, I had a 1960 XK-150 FHC that was originally black with red leather. When I bought it in 1970, it had been resprayed red. I never have cared much for red, especially in an interior. My intention was to take it back to it's original black paint color but with saddle tan leather.
Years later, I was walking down the main street in Solvang, CA and came upon a Jaguar XJC V12 parked along the street. It was black, with a matching painted steel roof in place of the regrettable vinyl thing and had lovely tan leather. That sighting rienforced my love of that combo as well as starting a list for an XJC, as yet unfulfilled.
The safe bet is Topsonline but I'm also curious as to anyone's experience with these covers.

I emailed them (lseat) and they are sending me a sample of their leather, they said that the color was not an oem match but close, I'll probably go with tops on line but if lseat leather seems good enough it might be a viable alternative for someone wanting to replace both the front and rear leather (299@). I told them I had a 2005 and they didn't indicate that was a problem even though their online photos show only the one piece lean back version. I'll post my opinion and a closeup of the leather swatch when I receive it.

Has anyone reading this use TopsOnline? I called their installer in my town and he wants $435 for each front seat to install them. This was a bit more than what I expected but I’m not certain of what is involved. Anyone else have experience with the installation?
There are some threads where folks on this forum installed them themselves.
I'm sort of handy with my hands and plan on doing my own install.
To answer your question, that seems a bit steep.
but
2-3 hours per seat might cost that much nowadays

I replaced the covers on my 97, and it was more than 3 hrs. each working alone, but that was the first time. I believe the seat back for the separate headrest design is more difficult.
My 06 has Alcantara inserts which are beginning to look a little shabby and I will have to look for someone to repair them eventually.
I too have a 2005 XK8 Vert. Lseat emailed me a couple of days ago after I sent them a picture of my drivers seat. Turns out that they don't have that particular cover but they offered me 50% off if I supplied them my old seat covers to use as a pattern.
Texasbill - I used topsonline for my seat covers and replaced them myself. Took about 6 to 7 hours to do both fronts. Did not replace the center console as I had purchased a complete center console a few months prior. The biggest pain is trying to stretch the cover to engage the plastic mounting strips but overall a doable DIY job
My Topsonlie seat covers are still going strong. The colour match (ivory is perfect) The leather itself does not have the same smooth silky feel to it but it more longer lasting and in my opinion is better.
The only thing to watch out is don't break the seat hinge plastics covers as they break very easily and also the metal tang clips that grip the seat cover into the back panel are an absolute pain to do and can and probably will unclip until eventually the seat cover is stretched from wear. The more clips you fit initially the better.
People show good results from repairing their own leather with filler and dye etc but I'm not sure how good the result would be close up and how long it will last.
