I have searched and found where several members have removed their steering wheel, brut cannot find instructions on how it's done. (Other than disconnect the battery and it requiring a jewels screwdriver)

My cruise control buttons have to be mashed down multiple time to work and the Dealership said the airbag must be removed to replace the switch set....

Looking at the shop manual, removing the steering wheel is not a trivial project. All the switch wiring and the airbag present some serious challenges. I would leave this project to a qualified Jag mechanic.

 

I agree this procedure requires some care. You don't want to set off an airbag.

Meanwhile, I'm surprised you are out of warranty - my MY14 just came out last August.

 

I was going to say the same thing about the warranty, but it must be the mileage.

Judging by the instructions in the Workshop Manual it shouldn't be that hard to do, the only real problem may be the two "special tools" that are needed - the drivers's airbag removal tool JLR-501-170 and the clockspring locking tool 211-326. I recall reading somewhere that a small flat blade screwdriver can be used in place of the airbag removal tool as long as you are reasonable dexterous (rules me out!) but I'm not so sure if there is a way around the clockspring locking tool although I suspect a half-decent mechanic/workshop would know a way.
Anyway, here are the two procedures from the Workshop Manual:

 

In case anyone comes across this in the future, I just replaced my steering wheel with a flat bottom and wanted to share my experience.

Don't be scared or intimidated. This is not a difficult job if you know how to turn a wrench. You don't need the "special tools", a straight pick will do the job of getting to the airbag clips behind the steering wheel.

If you search eBay for a 'hook and pick set', these sets can be picked up for AU$10.

Don't forget to disconnect the negative battery terminal before you get started.

You don't need to remove the clock spring if you're just swapping over the steering wheel. Make sure you keep the clock spring as still as possible. Some movement won't hurt, but don't let it go crazy.

Take note of the markings on the steering wheel when you remove it and align the markings when you put the wheel/replacement wheel back on.

Put some blue thread locker on the bolt and tighten to 63nm.

Overall, it's a 3/10 for difficulty. The thing that will stress you out is worrying about your airbag deploying. Once you get over that fear, it's a very easy job.

 

The advice I've seen is not to disconnect the battery until you've released the airbag clips as you'll need to turn the steering wheel in both directions for access.
