should I install the wind screen?
The dealer left the wind screen kit in my trunk instead of installing it. Seems easy to install but since the cat looks cleaner without it, I'm wondering if the wind screen actually does anything.
Has anyone driven their car with and without the wind screen? Does it make a difference and if so at what speed?

Whether the windscreen makes a difference to you is likely a function of how tall you are and your preferred seating position. I'm 6'3", adjust my seat as low and far back as possible, and see no need for it. In that position, I feel almost no rearward buffet compared with any of the other 10 or so other convertibles I've owned. I did try raising my seat some on a couple of occasions and immediately noticed more turbulence.
My BMW M-Roadster had an almost identically designed windscreen, the aerodynamics in my preferred seat position were different for whatever reasons, and there was considerable buffet from behind. It did make a significant difference in that car.
If you sit higher up and more forward, perhaps it makes a difference, in the F-Type.

Driven extensively with and without, and wind buffeting is much more pronounced without the deflector, regardless of whether the side windows are up or down. The car is certainly than driveable without it, but it can be much more intense. Whether that's a good or bad thing is a personal preference. Having tried both, I generally prefer to drive with it in place - and I have the top down at pretty much every opportunity.
Just leave it in place. When the roof is closed, it does not do much to obscure the rear vision and when you open the roof it is already there taking care of you (whether you need it or not). I have never taken it out (the dealer had put it in place) so can't answer whether it is better in or not but since it does nothing bad I am happy to leave it be.
