This is will give you an idea of what you're looking at, but need to know if you have a V8 or V6 as they will be slightly different.

The factory manual I have doesn't say anything about having to break the AC system. I changed my cooling fan last year and know I didn't have to do anything to the AC except unbolt the receiver/dryer and move it to the side.
As far as the radiator, I think the only thing I had to do was disconnect the upper hose and remove the upper mounting brackets. That gave enough room to tip the radiator forward without having to completely remove it.
The one thing I remember as being very difficult is two metal clips at the bottom of the shroud. The bottom of the shroud wraps forward under the radiator. The clips secure the shroud to the bottom of the radiator. They were a booger to access and slip off there. I didn't bother reinstalling them.
If the shroud didn't wrap under the radiator, this would have been a much simpler job. You could have loosened the shroud and lifted it straight up for removal. Instead, you've got to fight the shroud aft to clear the radiator. I guess you could remove the radiator and shroud as a unit, so that is your call.
When you unbolt the fan from the motor, be aware those are LH threads on the shaft.

Test would be to try and turn the fan by hand when engine off (be careful) it should turn freely, no grit feeling.
Another test would be when starting the car cold turn the AC on to low. The fan will run at full speed. If it doesn't the motor is shot.
Good luck I changed the fan assembly on my 00 S Type 4.0 - it's a PITA and I had to evac the AC system to get the shroud out.
