SOlved: correct PAS fluid for MY2000 s-type.
Hi all, new to the forums here and new to jag ownership.I have found this forum to be invaluable in rescuimg my 2000 s-type.
Looking through the forums, it didn't really seem like there was a clear consensus on what power steering fluid should be used the the 2000 s-types. After searching all over the place, I have found that Amsoil full synthetic power steering fluid has a spec on the bottle for M2C-195-A. Just chenged the fluid a short while ago and all of my issues that so many people on the forum have discussed (whining pump, shuddering when turning the wheel, etc) went immediately away.
For reference I have a 3.0 s-type Vin L64820 and I did use the turkey baster method. I didn't vacuum bleed the system yet,but it is already running wayyy better. Thought maybe this fluid should be added to the s-type reference sticky as well but wasn't sure how to PM Sjurad?
Hope this helps out a few people and saves everyone some money as it is only about 9 dollars per half liter bottle.

Glad you found a replacement for ESSO 998.
If you completely drain the system (introduce air) then you will need to vacuum bleed the system.
Removing a little and then top-up (some-at-a-time) will not require vacuum bleeding.
