Stripped intake manifold brass fitting
What's the best way to get the bolt out that stripped the fitting?

Are you talking about the brass inserts in the lower intake manifold? These inserts are for the bolts securing the upper manifold, aka plenum.
If the insert has come loose, can you remove the other bolts and then lift the upper portion straight up? Once the plenum is removed, you’d have good access to grip the loose insert with a pair of pliers.
I suppose you could clean up the threads on the old insert and then epoxy it to the lower manifold. Make sure it does not stick up or you’ll never get a good seal for the plenum. But if there’s any doubt about such a repair, I’d suggest a serviceable used lower manifold. I see several on eBay right now.
