You should actually use low octane for steady cruising and higher(er) octane for city driving. The presence of ethanol should not affect your choice of octane rating.

As at 08 August 2017 my local Surfers Paradise [QLD] Seven-11 station has the following: E10=107.3/ U91=109.3/ U95=120.3/U98=125.3[CPL] I'm going to fillup with U95 today.
My question though is, would Josephine [2005 S type 3.0L 6Sp.auto] run happily on 91 which i note many of you in Europe use?

Yes, Remiss of me to not indicate that Australia uses RON [Research Octane Number] the most common type of octane rating worldwide. Again then, can my 'S' use RON91?
NB: Octane rating [number] is a standard measure of the performance of an engine. The higher the octane number, the more compression the fuel can withstand before detonating [igniting]. Fuels with a higher octane rating are used in high performance petrol engines requiring higher compression ratios. Lower octane fuels are ideal for diesel [compression-ignition] engines which don't compress the fuel, but rather compress air then inject fuel into it.

I am with you, my exact sentiment and as someone else pointed out, at 15 cents a gallon more it might cost another $2.50 per fill up, about the same price you might pay for a cup of coffee these days.

Nice for you that it's only 15 cents a gallon difference where you are, most of the world pays far more than that, maybe up to a dollar/usg.

Price differential is the least important factor in choosing fuel or oil etc. To dismiss this justifies boiling pasta in Perrier or Naive water.
