MLLAS, the fans are controlled by the ECM, not by the thermostat on the car. Keep in mind that if you have the climate control turned on (set to defrost or A/C), the fans will kick on right away. SO, make sure that the climate control is turned off. Then see if the fans are still coming on.

If this is the case and you are getting a corresponding signal from the ECM, then you have a problem with the ECM. If you are getting no signal from the ECM yet the fans are running, then you have a failed fan control module. Granted, normally when the control module fails, the fans will not run at all. So, it is leaning back towards a bad ECM if there is a fault. If you want some more info, let me know.

The fans are controlled by an electronic module, which gets it signal from the ecm... the ecm gets its information from a temperature sensor.

Failure of the fan module is sorta common, and it sucks because they only sell the entire fan assembly with the two fans and the module together.
If you search around you will find a used module, without all the other stuff.

The dealer's computer can read fault codes from this module and help you decide what to do.

Certainly I dont think it is the thermostat...
