I am trying to replace the shoe brakes on my 1996 Jaguar XJR. I have the new ones I just don't know how to take off the old ones to put on the new ones. Any suggestions your help is much appreciated!
I have moved your post from the forum for the X350 to the forum for the X300, which is the Jaguar project code for your 1996 XJR. Here you will find knowledgeable owners of similar cars.
Regarding the brake shoes you are having difficulty with, are they the rear parking brake shoes, Part 18 in the diagram below, or the disc brake pads, Part 17?
Or are they the front brake pads, Part 9 in this diagram?

Half way down each shoe is a pin and collet/spring arrangement which keeps the shoe from moving away from the backplate. This (after a light tap to loosen rust) collet needs to be pushed against the spring and rotated through 90 degrees. The collet and spring will then come away, allowing movement of the shoes.
The shoes are strongly sprung, watch your fingers ! You should be able to move one shoe from its locating slots and then be able to unhook the springs, the second shoe will then come away.
Take note of how the springs attach, fitting the new shoes is basically the above in reverse order.
Adjust the shoes once the drum/disc is refitted by rotating the "adjuster thing" (for want of a better description) at the top, through the inspection hole with a screwdriver, until the brake nips up, then back off. This adjustment may well need to be done again on both sides once the handbrake has been applied a few times and the shoes and cable centre themselves.
