Correct coolant?
On one occasion I had an "engine coolant low" warning. It only lasted for a few minutes and I haven't seen it since, but I want to keep an eye on the level and have the correct coolant to hand to top up.
From what I've read the OEM Part number is JLM209723. Googling this I find a few links to jag parts suppliers who don't have stock and this non-Jag one on Amazon:
Would folks recommend this or should I make more effort to source genuine Jaguar fluids?

Thanks I checked on the Halfords site and they list a Premixed and a concentrate OAT coolant, but don't quote the specs for either. The one I referenced on Amazon quotes JLM209723 but not M97B44-D. I think I will order it and return if it isn't M97B44-D.

There is no standard for colours, so if you don't know what coolant is in there, drain the whole system and flush it with a coolant flush. Then you can re-fill with anything you want. You've got loads of choice in the UK from Amazon and Halfords of different coolants to use, as has been said, just make sure its the spec that is in the manual.
BTW if you don't know when the thermostat was last changed, now is a good time to change that as well.

I dont actually understand this warning "dont mix coolants". If all the coolants, whatever the source meet the spec (Halfords DOES by the way - they have a huge book next to their antifreeze stock, just gotta marry it up to your model) then for topping up purposes, whats the difference? Just asking! I know probably someone here will offer some kind of technical horror story that tells of engines becoming terminally sick because of mixed fluids but in the real world, Really?

Just make sure that whatever you put in is the same stuff you already have. If you're unsure, properly flush out the system and add the correct coolant specified in the manual.

The technical horror stores do exist, but always with coolants of different specs.
Rather than buying coolant under Jag's part number JLM209723 use the coolant spec mentioned in the owners manual, M97B44-D in this case. Much cheaper and easier to find. Jag does not manufacture their own coolant or use a proprietary spec.

Dexcool for 2000-to-? Model Year
In the Jaguar Vehicle Specifications book (dated 9/2003; see attachment), it states that XK8s -and- XKRs from MY 2000 to 2003 are spec'd to use a coolant that meets WSS M97B44-D, and the stuff I buy at Wal-Mart for about $15 meets that spec (also see attached pic and URL).
I've seen the much more expensive MotorCraft Orange (about $30 or so) that meets that spec, but, why pay more? If there is a good reason to do so I will. Otherwise, I get the DexCool at Wal-Mart (used in my 2000 XK8).

BTW, this coolant is also spec'd for SOME pre-2000 XK8s and XKRs as you can see, so check the numbers carefully. Also, since this specification book was published in 2003, there are vechicles beyond the 2003 MY that will use this coolant as well; seems to me I've seen elsewhere that it is used up to 2007 MY in some Jags.
As others have stated many times, "READ YOUR OWNER'S MANUAL" for the correct coolant to use.
To toss a red herring in here, it has been seen on other forums that newer HOAT coolants are a superior replacement for OAT coolants (this Dex-Cool, for instance) in all vehicles, but, I cannot confirm that without more research.
