Engine temp guage has always been dead center. Of late, however, it is vaciliating between dead center and one line down. When it does that I sense the cabin temperature getting a bit lower (my imagiation?). This happened after I filled the coolant tank after getting the "Engine coolant low". It did not take much fluid.

Any thoughts...concerns?

I recently topped off my coolant as well because of the same warning. The next day I got a check engine code P0128, something to do with coolant temperature to cold. I'm going to keep an eye on my engine temperature in case the thermostat is stuck as was suggested by h20boy here on the forums.
