The guy contacted me this morning and said he had someone interested that was local so it's probably a no go now.

That means I'm back to figuring out what to do.

So how large a cross section tire could I put on these 20" rims and not hit the fenders through dips? It's got 285/30 in the rear now. Could I go to a 40 or 45 or will it rub?

Not sure about rubbing but be sure when you fool with the cross section that the final diameter is the same on the front and rear, or you will confuse your ABS and that is usually not good for reliability.
