When I look in the PCV pipe opening in the PS valve cover, I see a metal plate underneath, should I not be seeing some kind of baffling?

If you see the metal plate, you're good. Your oil separator is in place. The metal mesh that's also part of the oil separator can't be seen through the breather hole.
