Sticky tires for handling winding roads in the Tropics?

Default Sticky tires for handling winding roads in the Tropics?
My 1998 XK8 Convertible and I live in a tropical climate on Maui where there are lots of windy roads with ocean views (perfect for top-down driving) so what I'm looking for are sticky tires with great lateral grip. Any ideas?
