The boot lights MUST illuminate for the VALET to be CANCELLED. (BOOT OPEN INDICATED ON THE INSTPK)
Sounds like the boot lid latch switch failed.
I had to pull the trim loose on a customer car to 'JUMP' the latch switch to turn the lights on to disable the VALET mode and order a new switch.

My 2000 XK8 did exactly the same thing the first day I was leaving for work after buying it, not only that but exactly the same problem with the release. No reset opening the trunk with key or fob. Turned out I bumped the cheap valet switch with my knee getting in and the switch was stuck in. I cleaned around it with the end of an unbent paper clip then sprayed WD40 in sparingly around the edges. After pushing it a few times it began to operate smoothly and didn't stick in. No issues for 3 months now.

The early XK8's didn't have a release button in the centre of the lid trim although several owners have retrofitted one.
You should add whether you have an OE fitted release button and also if it has ever worked since you purchased the vehicle.
