Wondering about that, any suggestions? I was looking at this:

Just be aware of the side airbags and Jaguar's warning about seat cover's.
Install at your own risk.

But you have a XK8 and the warning applies to sedans.

Side airbags were introduced on the XK8/XKR with 2001 MY so yours may just predate this.

If you have side airbags, there's an identification tag stitched into the seam:

My 2001 definitely had this type of tag but I can't remember whether the seat back release also had the word 'airbag' embossed like my 2005 shown in the pic.

A company named Sheepskin Express makes custom tailored covers for Jags.

As a matter of fact, when I called and told the owner my car, model year, and seat
style (Recaro), he was the one that told me they would be made with slits to accomodate the side air bags. Up to that time, I had no idea that my seats even had
side bags.

These guys make a very high quality product, but they will set you back a bunch more than anything on Ebay. I think a set without headrests ran about $500+.

I'm nowhere near wanting to spend 500 on seat covers. Yeah I don't see an airbag tag on my seats. It's mainly because the drivers seat is a bit crispy even after I apply leather conditioner generously. The passenger seat and back "seats" are flawless but leather that old is just waiting to crack. Wish I had a black interior!

Here is a tan 'seat cover' for you.... might set you back more than $500..... but at least the airbags are in the correct orientation and not to the side.
