In case you are still considering opinions...
I bought a 2015 v8s vert. Power was insane but for me- pretty dangerous. After my second spin out I sold that thing. Missed it and decided to buy another one last year. Like you I researched model years and options. I chose the 2016 v8R vert. Reason- far better control (for me). Still insane power and delicious exhaust noise. But also- the upgraded stereo was standard in both R models in 2016- which I wanted. Also seemed like 2016 depreciation started to tail off SLIGHTLY. This has paid off since I’m now selling it (see for sale forums) and have received a trade in quote only $5200 less than I paid for it. But in the end, you pretty much can’t lose with these cars. Quality is very good (at least both of mine have been flawless).

The F-Type is an outstanding car and there is a reasonable line of logic for several versions:
2014 Vert to have the original.
V8 RWD because it's extinct.
V8 AWD because you like the V8 power, but want some control around that power.
V6 RWD because it's the right balance of power (my personal choice).
V6-S if you're lazy and happy enough with the factory tune.
Basic tune if want a cheaper enter point - especially if you are creative and want to get a tune.
(If so, go older and don't worry about voiding the warranty.)
Newer if you want the security of a warranty.
New if you want the latest ICTP system with Car Play and don't mind the front-end depreciation.
Project 7 if you have a quiet garage for the collection and something else to drive 99% of the time.

For me, it had to be a V8 and it had to have AWD. (And convertible, in my case.) Then, I wanted it already depreciated as possible. That meant 2016 R for me. I bought knowing I'd still take more hit on its depreciating further because I wanted the car now, not next year.

While certain features vary from year to year, the overall body styling (gorgeous), interior, and engine availability has remained pretty constant (but the smallest engine is now a 4 cylinder unit rated at almost 300 hp)...
Colour choice is subjective but Jaguar has a stunning palette...the standard colours were white, black and red...but beyond those the optional colour choices were exquisite -and colour makes a huge difference in the way the car looks.

I'm the lucky one with both the clutch issue and the fuel injection issue, but post 42K miles (Jag wrote them off), I had a brand new manual 340hp BRG tan top vert delivered (on the house without struggle, per lemon law), and they're even kind enough to throw in Xpel and swap out my short shifter, etc. Very impressed with how they handled it... although the '16 was in the shop 8 or 9 times and a total of 3 or 4 months in 3 years, I couldn't have hoped for a better, or more professional outcome.
That being said, I'll throw my hat into the mix....
This is not my recommendation to OP, but I'm 340 base *all the way*, and have even ruffled feathers in suggesting that the 380 sounds like a lawnmower in the mud, and the 340 just sounds a bit more dignified, IMHO. But, a) subjective are aesthetics, and b) I doubt you'll get a good sense, even from this great video (because in the cabin is different than this for sure).
As for model year.... I love the '16, and won't miss the '16. The updated safety features aren't the big seller on '19 (although I bet the lane change thing is annoying), and not having the option to ditch the heated windshield will frustrate my OCD self who can see the wiggly lines LOL), but the updated infotainment, and the larger screen, is a REAL treat. The addition of cooled seats to the heated seats is REALLY amazing. There's subtle style changes YoY that only die hards would know. I'm going to pick up the new one Wednesday, and will be doing side by side photos of identical BRG/Tan verts and will post them and point out some of those differences.
But without looking at the thread, I'm going to assume the winner is the 2015 RWD 8cyl R? Because that thing is likely going to be the biggest collectible of the lot, including the manuals. That thing is an unhinged beast.

Exactly. The feel of rough surface is muted. Otherwise the tactile feel of the eps on the f-type is every bit as good as any hydraulic ps.

The sensitivity of the steering is one of the things I will take up with the dealer at my first year service in a month or so. I find it to be a bit "squirrely" at speed in a sweeping turn and would like there to be more resistance. I've tried deflating the tires to compensate, but that doesn't work. I'm hoping there is an adjustment that can be made to tighten up the steering across the MPH range.

Yep, dynamic mode seems to give plenty of weight to the steering feel, I find standard mode a bit over-boosted.

Yeah, it's true. When I was in my '97 Cozy, I never had all of the electronic nannies that cars have these days. I do agree about the F-Type having some severe blind spots and would highly recommend the Vision Pack option.

If the seats are thinner, I hope my tall *** isn't too wide (I think I'll be fine)....
And with all this infotainment talk, I should note '19 got a 2" larger screen from 6" to 8", or 8" to 10". I think the former. And all that updated fun that comes with it.
TOTAL random observation... the P-Zeros don't seem to be coming stock, and didn't see which type but my new tires were continentals.
