Winter mode - is it standard?
You mean available as an option?
And if that is the case, is it standard on the V8?
Main reason for asking is that I have what in Germany is called "German Edition" - and I have no idea what that actually means? I thought it might have something to do with things like winter mode, heated steering wheel, seats and front window as standard?
No, definitely standard on my V6S. I believe Foosh is correct: standard on all U.S. models. Remember, we don't know how to drive here, so we are forced into AWD on the V8 and have DSC on all cars. Big Brother is watching us.

LOL, you "believe" I'm correct? I know I'm correct because I have base model with no options, which has winter mode. All models also come standard with dynamic and sport mode.
I think it's winter/rain mode? You get slightly better highway mileage in that mode, as it almost completely ignores what you do with your right foot (except for braking, if you're into that.)

You may already know this, but apparently if you're in dynamic + sport mode the speed limiter is disabled. There was a video of someone in an F-Type R hitting 199 mph a few weeks back.
The tires are only rated for 186 mph which is why the limit is there AFAIK.
