S type skin thickness
I am not sure but can tell you that the S-type fenders are crazy strong as I had to use a frame puller with two chains on each rear fender just to get a minor 1/2" bow on the rear fenders to ensure there was no tire rub when I did the body work. These cars are made like a tank.
Unfortunately this is not commonly published information. The various steel panel thicknesses are measure using the Standard Wire Gauge system, (SWG). The UK supplier of Jaguar panels, Martin Robey, may be able to help you.

Other than the doors, hood, trunk the rest is a one shell. You can get used parts for an S-type and for body sections that are not the above sectional parts you can find wrecking yards whom may cut out the section your are missing.

My car has had panel damage bogged over. The creases are to tight I think to straighten and not a lot of s type wrecks in Darwin Australia. Looking at my options ie costs to see if I can replace panels. Only need front of LH fender ans sills. The rest I can cut and paste.

As far as I know, Martin Robey is the only manufacturer of panels for the classic Jaguars now. I think they do ship to Oz, but bear in mind only a small subset of the original panels are made, namely those that tend to rust out.
What I do know is that the sill sections are a far thicker gauge than the other panels, 16 swg I believe.

I did that on a piece of scrap from a S type door skin (I never throw anything away!)
Measured about 0.039" or 1.01mm on my calipers. According to Wiki, that equals 19SWG.

I think the door skins are always thinner than the rest of the body panels, because the door skins need to be "pliable" or "bendable", whereas the wings and other "permanent" panels need to be sturdy.
