EPB - how to turn it off?
Could you cope with just disabling it when you need to? It's the Emergency brake so it's not ideal to permanently disable it.
You can stop it engaging any time just by holding the paddle down as you remove the key.

I know the trick with the paddle and I also know it's an emergency brake but I'd like to ride the car for a few miles without it. It looks like there's a clearance problem with the new EPB pads so I don't want to damage the new rotors.
Amigo, don't take the risk, those aftermarket EPB's you bought isn't worth causing more problems for you. Best bet just buy the OEM EPBs for the STR from Nalley Jaguar(mention your a jaguar forums member to receive discount) and your set.
Good Luck...

I don't have an S Type, and I'm thinking that JagV8 or Mikey may quite rightly think me way off target.
But if your new EPB pads are rubbing because they are slightly thicker than OEM, why not simply sand them down until they are the correct thickness, and then install them.
After all, that is what your rotors do, over a longer period.
This assumes that the EPB is working correctly in the first place.

You might want to tell us the whole story to help with getting useful answers. If you're driving the car to a garage to get the new brakes installed and working properly, simply reinstall the old pads for the trip.
