Just buying a 2003 S-Type 300L. Anyone ever upgraded the console with a more modern screen, blue tooth technology, etc. or is this a no-no

if the car your buying already has the factory Nav/ touch screen ,
and you wish to upgrade , then google search Jagdroid .

It's pretty easy if you DON'T have the factory navigation. Very expensive if you do.
Which set up do you have?

I do not have the factory navigation - its AM/FM radio and CD player - also has a “phone button” but says no phone and not sure how to pair?
