well this is interesting
For the 3 years I've had my STR I've been putting 245/45 size tires on the front, the same size that was on there when I bought it. Come to find out yesterday that the sticker on the door says 245/40! Not that big of a deal, just a little taller right?
Due to a bubble (and low tread left) I needed my front tires replaced. Didn't really have the money for brand new ones, so I went to my usual shop for a set of used. He didn't have my size in stock this time, so he put on 255/40. A little wider than stock, don't know how much of an issue it is. But for $100 installed for two michelin z-rated tires with like-new tread I can't complain.

You are about 3.9% different in size, the only major thing affected should have been you speedo calibration which is not a big deal IMO.

He's talking about the fronts, where is the speedo cable at? Most run on the trans, so relation to drive tire rpm's, the rear tires on the STR. If that is true to the STR it should not affect his speedo.
Almost no car has a speedometer cable any more. Most use the ABS system since it's measuring wheel rotation all the time anyway. It's really easy to piggy back on this signal to electrically generate speed. Plus removing the speedometer cable from the transmission removed one more leakage/contamination point.

I know that second hand tyres are a huge saving on new prices, but I would be very cautious here. The main issue is the date of manufacture. Make sure you check the date stamp on the tyre. I would not buy anything more than about 5-6 years old as the rubber gets too hard and efficiency/ grip drops.

Most 08 trucks run off a VSS wire for the speedo. but then again, you dont say WHAT kind of truck, so its a moot point now.

$100 for two good Jag. tyres sounds brill. to me; I have a second-hand tyre man in Leeds I've been using for 25 years or so, and he's never yet supplied a bad tyre. I once, a long time ago had a little argument with him over wheel balancing, he maintained quality tyres didn't need balancing and he was quite blunt about it. He was right and I was wrong it transpired after a few years.
