when mine did that, my coolant reservoir sensor was going bad. I ended up replacing the whole reservoir

It's a daily driver which is the problem. It can't be off the road for very long, I'm fixing my intercooler pump at the moment, I have the wiring and fuses in the mail. I probably have a leak somewhere, last time it was an O-ring that was wheeping so I hope it's something easy.
My coolant level was a little low so I either have another leak or the intercooler just filled up and removed any air pockets because it was dry before and I topped it up. I will keep an eye on it for the time being, I can't see any coolant dripping but I will check the ground when I move the car.
If you consistently loose a little water and it brings the low coolant light on it could be/was in my case that the reservoir called the atmospheric tank ( located behind the plastic trim to the rear of the RH wheel) is low . Needs to be half full to suck back overflow.

Could be that as well. If it was a coolant leak in the valley of the V8 I should think you will smell burning coolant because if you spill some and turn the engine on you can smell it very easily. I will keep an eye on it though for sure, I don't want to total my engine. These cars are getting old and tired, my suspension really needs a full rebuild as well.
