Wanting what you have
Had a colleague once tell me the old line "happiness is wanting what you have"...was younger....
We all understand this...and it is wise, but if you are a car person there is always this urge to get a different thing seemingly...and oddly the cars that have weird flaws are often the ones most valued/wanted/rare/etc.
Then I got an F -type. In my case an awd (have snow and hard rains.....) v6s. Then found VAP.... The car sits at just under 500hp, and is shorter geared ..
It is just what I want now. Every day. It is a smile incarnate.

I can relate with the OP. I think maybe it's all just part of getting older?
My F-Type R is my second dream car I've had the pleasure of owning. At 550 horses stock + AWD, the thing gets up to speed right quick. I don't see myself really wanting to go any faster. As a husband and father of two children I don't take the kinds of risks I used to in my twenties or early thirties. Sure, getting quickly up to 45 or 55 mph on roads and highways or 75 mph on the freeway (sometimes taking liberties on wide open roads), is fun and all and still brings a smile to my face, but I've been there and done that. My racing days are behind me (other than gaming). My days of owning a two-seater are kind of over, at least until I retire and/or the kids are older.
The F-Type was/is all that I've really wanted or needed out of a sports car. I don't need more than this. There's no other car on the road I look at and say "ooooo!!! I must have that!" The F-Type was/is that car.
For the second time shortly after obtaining my dream car, that model has been ended by the manufacturer. My first was the Pontiac Trans Am (WS6). I got mine in 2001 and the entire model line was ended in 2002. I would have happily stuck with and purchased newer models, but that was the end of them. Pontiac was axed by GM completely pre 2010. I get my second dream car in 2022, the F-Type, and Jaguar announces the end of the F-Type. As if that wasn't bad enough already, the end of ICE models completely.
Oh well. I'm happy with what I have experienced. At least we got to enjoy them.

We're witnessing the end of an era w/ this artificial / contrived push towards electric. They all feel like cheap toys, like giant RC cars. The ICE itself is a thing of beauty. Electric is just a bunch of circuit boards w/ a tablet glued to the dash sitting on a giant battery on wheels. They lack a proper heart and soul.
Don't get me wrong because I love my car to death, but I can think of several cars I would rather have. In no particular order...a Porsche GT1, a Porsche 992 GT3rs, and my all-time favorite car, the Lamborghini Mura S.

I approach my cars the same way I approach the women in my life. I invest a lot up front making sure that I get the right one that meets my requirements and then I stick with her for the long haul ;-)
MANY years ago when I was acquiring the herd of british cars, I found "Pardo's Second Postulate". Researching a bit online, it appears that "Pardo's Postulate" may have been "Anything good is either illegal, immoral or fattening". The Second is "Don't care if you're rich or not, as long as you can live comfortably and have everything you want."
So true. I had the car-lust bug, badly. Found out that through careful research, I could purchase an exotic, drive it for a few years, and then sell at profit. This strategy took me through a series of Italian supercars over 25 years. Eventually owned most of the cars I had on my wall as a kid. I've had several Lamborghinis (85 Countach 5000s, 92 Diablo VT, 01 Diablo 6.0), Ferraris (a couple 308s, 88 Testarossa, 2001 456 GT), and 2 NSX. Engine fire in the Testarossa thanks to a design defect soured me on that brand. After 35 years in and out of exotics, the F Type R is nearly perfect. All the great design and performance with far-fewer headaches. But, if you got that exotic itch, you'll eventually scratch it, I understand.
In case you forgot about the memo issued several decades ago [and assuming that "your" woman is as good looking as your car], if you are unable or unwilling to provide a consistent level of appropriate entertainment, AND, if you are unable or unwilling to provide a robust portfolio of resources, you will be kicked to the curb, replaced by another fool more than willing to trade a lifetime of hard work for an occasional favor.
