Default Radiator fan problem

1999 XJR, 200,000 miles. Car runs and drives great, but had a radiator fan go out. I replaced them, replaced the 30A fuse, and also put in a new relay thats under the fender. Sat car at idle til temp came up and physically watched that the fans engaged, which they did. Drove the car on a 2 hour round trip on highway, no issues. Drove the car the next day around town for around 30 min...noticed the temp gage was going up to hot. Pulled over, opened hood...fans not working. Cooled car off and got it home. Opened hood again, shut car off...waited a few minutes, cranked car up, fans not working...shut car off and fans come on for 2 seconds, then shut off. Cranked car up again, no fans, shut off and fans come on again for 2 seconds then go off. Also, I did replace the temperature sensor last year, the temp gage is working. The car did this crazy fan thing twice since I replaced the fans. My neighbor said it sounds to him like something is getting hot electrically. I am at a loss, however I'm wondering if the ECU is doing funny stuff. The car has done weird things the last few years such as the FODS working sporadically, the memory on the seat position coming and going, rough idling every now and then, hard starting once in a while, just to name a few. Overall the car runs and drives great, but this fan thing is baffling. Any help or thoughts would be greatly appreciated.

Welcome to the forums brianz880,

Two immediate thoughts:
1. don't rely on the temperature gauge - the engine is already overheating before the gauge moves from the normal position
2. don't risk an overheat on the Jaguar V8 - expensive at best but too easily terminal

With a history of weird things, a scan for stored codes could be helpful.
