Your engine is a Duratec V-6, with specially designed Jaguar cylinder heads. The original design engineering was purchased from Porsche and was refined by Cosworth. Engine management systems were changed to a Denso system in 2002.5 in your area of the world with the other X202 revisions. The engine was built in the Cleveland Engine Plant #2 and is a very good "mill"...

not a duratec. you have the JV6, in the 03+ it’s the AJ62. before is AJ60

JV6 uses the same block and bottom end components as the 60 degree modular V6 but very different heads.

Who makes the 3.0 liter in my 2000 S-Type? someone said Ford, but it doesn't look like any Ford motor I have ever seen.

The bottom end is basically a Duratec V-6, but the cylinder heads and intake were designed by Jaguar. The engines were produced in Ford's Cleveland Engine Plant #2. The original window sticker on my 2003 even states USA as the origin for the engine and Germany for the origin of the transmission, IIRC.
