On the passenger side right of the alternator are 3 seperate plug in connections. Jaguar calls it the cooling module plug ins. A very common fault is pin corrosion on the plug in that has the intercooler pump in it. I had the exact same issue and found bad pins that i bypassed with new wires. I think you can access this area by removing the right front wheel and it is behind the wheel liner close to the sub frame rail. You cannot miss it because of the amount of wires coming and going

There are 2 coolant pumps on your car. So make sure which one your working on.
Do you know where they both are? The inter cooler pump is on the front of the radiator and usually accessed by removing the front bumper. The AUX coolant pump is on the inside of the radiator and is accessed by removing the top coolant tank. But they are both on the passenger side of the engine. AUX pump is mounted higher than the inter cooler pump.

I have worked on the inter cooler pump by removing the plastic cover under the front bumper but it's very tight doing it that way.

Forgive my ignorance, but is the pump always powered with the key on? Or does the pump only get power under certain conditions, such as above X RPM or Y throttle position? I'd hate to see you troubleshooting something that isn't actually broken. Heaven knows I've never done that...

IC pumps are on all the time. Most of the time when you turn the key and power up the car. Some only when the engine is running. So I always make sure the engine is running when I check for power.

there is one with 2 large gauge wires for the fan. There is one with 10 or 12 wires and i think the intercooler pump is in that plug. Best i can remember. Sorry. Either way you should check all 3 for corrosion

Electrical Guide is free download and is generally excellent if you spend time on it.

IC pump always runs when ignition is turned on, whether engine running or not.

Earlier cars have power going to the pump on ignition P2. On later cars with the AJ34S engine, the engine needs to be running before power is supplied to the pump.
