Did I understand correctly from the information in bulletin S303-04 that I should replace my old t-shaped oil dipstick with a new one with a different marking and use more oil?
my car is jaguar s-type 3.0v6 2000
I don't understand??
That style of dipstick was installed starting in 1999.
You have a 2000 so your car should have the loop style dipstick from the factory? Does it have the old style dipstick for some reason?

Yes, the machine is from 2000, but it has a t-handle dipstick. I got an oil dipstick with a loop, the marks really differ by about 15mm. The question is, should I put a new type of oil dipstick? I suspect, since the car was bought by the first owner in Ukraine from the salon, it was new without a run in Europe and did not undergo any modifications from the dealer.
Mine is a 2004 3.0 manual, and I have the T-shape dipstick...
how much oil do you put in the engine? I have a little less than 6 liters with the old dipstick. The bulletin states that with a new dipstick it should be 6.5L
I'm not sure exactly how much oil it takes - I've only had the car a short while and when it came to me it had new oil. I had topped it up just before I read your post and realised that I had the T-shaped dip-stick too.
Jaguar reserves the right to modify their product without modifying ALL the previous products. (or something like that)
Most companies are like that. Just because they change something, they are NOT required to change ALL the products already sold.
Many time they do issue a TSB and recommend the changes be made to existing products but not always.
They also made changes to the V8 engine dipsticks.
