You might want to check the battery connections. Make sure they are tight. Next you will want to know what the battery level of charge is. It is possible to start a car on a weak battery and shut it off before the battery has had a chance to recover from the starting draw and then it won't crank.
It is a Jaguar, all problems begin at the battery.

If you put a wrench on it, can you get the crankshaft to spin?
I think you see where my thoughts are going.
If you have tested that the wiring to the starter works and the starter spins when it is off the car, but you only hear the start solenoid clicking when it is attached....... Maybe the rotating assembly is not free.

As mentioned, check everything before you jump to that conclusion. I thought it happened a 2nd time a few months back, but it wasn't nearly as bad, turns out my supercharger got something in the rotor assembly and was locked up and wouldn't let the crank pulley spin, therefore I just got the dreaded "click" as well. Once I removed the supercharger belt, the crank turned and I was able to isolate the issue.
Check other accessories to make sure there inst anything else locked up, remove the belt before you turn by hand.I doubt that if it was running just fine a few minutes before, the engine would seize up all of a sudden like that.
First what year is your car? You say that the wipers and radio work and you hear a click is that at the starter? You say that you removed the starter and bench checked it so it does not sound like the starter but can be the power to the starter. In the trunk you have 3 high power protection fuses and the one to the starter could be blown. You need to check the voltage at the starter from the battery.
