No if you are referring to the driveshaft then I think that UJ will be a little challenging. If you are refering to the axle shafts then those UJs are readily available.
The Jaguar driveshaft diagram shows the shaft to be a one piece unit, the UJ is not shown seperately. But....
Looking at the images of the driveshaft, that UJ is serviceable and is clipped not staked. A call to a driveshaft specialist might yield the correct UJ which is probably a Ford part anyway. Alternatively thay might be able to rebuild and balance your existing unit which would be beneficial beyond just the UJ installation.
You will be able to get that UJ somewhere, Jaguar don't make UJs so they picked it up somewhere.

Yes, that's the axle shaft from the diff to the road wheel. They don't have the actual drivehshaft (gearbox to diff) UJ listed unfortunately. Jaguar shows the driveshaft as a none serviceable single assembly, even though the UJs are clipped and will be replaceable - once you can find the correct UJ.

If half shafts (from differential to rear hub), then JLM1388 (SNG Barrett, etc.). Agree Rockauto should be fine - same as used on XJ6, etc. On a quick measurement of a spare one, it looks likely to be a greaseable 1350 series UJ (1 3/16 diameter by 3 5/8 length), but without digging out the vernier caliper I can't confirm. Also probably listed as GKN U220.
If driveshaft, then the 2 piece XKR one uses 1300 series UJs, non greasable, on the rear driveshaft (1 1/16 dia by 2 15/16 length). Note 1300 series, definitely not 1310 series.
So I would expect, but can't confirm that for driveshafts you would need 1300 series.
The term “CV” joint may be a problem. My understanding of that term is always in reference to front wheel drive axles. You have a simple rear wheel drive with independent rear axles and U joints. Simple tech.
Oddly, Rockauto doesn't show the diff/hub axle UJs for MY2003, but does for the earlier cars. The JEPC shows the same part # (as noted by chirpy) for all cars.
So assuming you want the universal joint(s) for the half shaft, i.e. part 2 below:
Using Jaguar part number JLM1388, which is the OEM part number, supplier choices include SNG Barratt, Moss Motors, Jagbits, etc.
for Rockauto you have (use the search function, or look up any XJ6, e.g. 1996 XJ6 Vanden Plas):
GMB 2150178, FVP 2100178, FVP 2150178
Noting that the listed dimensions in the ‘info’ details match 1350 series universal joint
(in which case I would probably go for Spicer 5-178X, since I find Spicer parts to be good quality)
